This was all working prior to upgrade. QODBC was used to populate data to Access db written by a third party.
Quickbooks Pre-Upgrade Setup:
QuickBooks Ent 7.0 installed on W2k3 Server. This server hosts the databses (.qbw files)
QODBC 7.0 was installed on the same W2k3 server. IBiz connector v3.0 was configured to run as a service connector.exe under the administrator creds.
QuickBooks Ent 7.0 client install on a W2k3 TS server in app mode.
QODBC 7.0 was installed on the same W2k3 server.

QuickBooks Post-Upgrade Environment.
QuickBooks Ent 8.0 installed on W2k3 Server. This server hosts the databses (.qbw files)
- Database files appear to have upgraded successfully.
- Quickbooks itself is functioning after upgrade.
QODBC 8.0 was installed on the same W2k3 server. The IBiz connector v3.0 configuration was not changed.
- QODBC Desktop Driver for Quickbooks USA 2008 Read Write is the version installed.
QuickBooks Ent 8.0 client install on a W2k3 TS server in app mode.
QODBC 8.0 was installed on the same W2k3 server.
- Same version as above.

Symptoms:
#1: The QODBC connector piece prompts for authentication. Creds provided for Admin login to QuickBooks, but it fails.

I did find this in the readme, but not sure if this applies to the above issue as the Quickbooks installation was an "in-place" upgrade.
"If you have prior versions of QuickBooks loaded on the machine attempting to use QODBC, you will get a connectivity error. See our FAQ page on the web for details".

#2: Did we get the correct version to run in our particular environment? While researching issues I found this in the Readme file.
"service or as a web component. Only our Web/Server Edition works in this manner. You may be using the Read-Only or the Read-Write version of the driver as a system".
