I'm trying to figure out if this is possible.  I would like to record a received payment without applying it to a corresponding invoice.  Sometimes checks are recieved without a corresponding invoice but I do not want to enter them as a deposit because they still need to be "checked off" by an actual person in Quickbooks before they are deposited.  I want the payment to show up in the list of payments received, so when the user clicks on "Record Deposits", they are presented with a list of checks that they can decide whether or not to actually deposit.

Is this possible?

See: How to I handle Customer credits on account? for more information on the procedure for receiving the payment before the Invoice.
